I've been into fermentation, particularly how they ferment soy sauce.
Particularly there is 生（なま）and　生（き）, the different readings indicate how alive the microorganisms in it are. き is practically dead, it's what most companies do since it keeps the taste of the soy sauce easier. They essentially pasteurize the soy sauce like they pasteurize milk (makes it essentially unusable).

The soy sauce that has the 生（なま） reading means the shits still alive in there.

Then you also have the fact that the size of the container can also affect the micro organisms in the soy sauce. If it's a smaller container, it's a better environment for the microorganisms.

And don't even get me started on fermented tea leaves.....
